1 1/4 pound hot sausage
1 pound cleaned and peeled shrimp
1/2 pound bay scallops (the small ones)
1/2 to 1 pound catfish fillets
1 large white onion finely chopped
1 large chili finely chopped
1 cup chopped leaks
3 tbsp hot sauce
4 cups chicken broth
4 cups water
64 oz crushed tomatoes
Remove skin from sausages and break up meat. Sauté sausage meat in olive oil until done. Remove sausage from pan but leave the drippings.
Sauté the onions and chili in the sausage drippings until the onions are soft.
Cut the catfish into bit size pieces.
In a stock pot combine all of the ingredients.
Bring to a boil.
Turn down heat and simmer about an hour.
Serve with rice or alone.
